sugar, sugar everywhere.....







These photos are from my Chocolate, Confections and Centerpieces class. This is there final project. They were to use only sugar and pastillage for this particular centerpiece. The theme was "The 12 Days of Christmas." I think they did a pretty great job!











































meyer lemon & key lime meltaways


I am the proud owner of a Meyer lemon tree and a Key Lime tree. These two dwarf trees have produced some of the best tasting citrus.
Being an avid lover of meltaway cookies, I thought I would add a bit more flavor, by adding both lemon and lime juice and zest (by the way, always use lots of zest.......you can't go wrong!). I took this picture in my kitchen, using my Kellog's Corn Flakes cup for some added flair. Recipe on it's way...........

I have been working on a few recipes over the school break. One of them is this delicious cookie. It's nothing but chocolate.......for all of you fans of the magnificent cocoa plant! You can sort of see the bits of chocolate in each cookie........But, the most important thing to remember is to use a high quality cocoa. I will get back with the recipe...........

Honeycomb Cake


I teach pastry at a culinary school. This week was final practicals. WOW.......What a week!! Some good and some bad. I hope that I do this correctly...but, I want to add a photo of a European Torte that one of my students created. The assignment was to come up with a torte that had either 3 types of cake and 2 fillings or vice versa. The torte that is in the photo has layers of almond genoise, honey meringue buttercream, fig gelee, goat cheese mousse and an almond jaconde. Not only did she make a fabulous tasting confection, she did a totally great job of decorating and displaying. Kudos to Stacy!!!!!!!

.....And It Begins!

Well, this is a first for me….in the blogging world, that is. All of this computer mumbo jumbo……still trying to get used to the site. So, please bear with me. I am a chef, by trade. I love food….the look, the smell, the preparation. Traveling and eating are the two most wonderful things to me…….and I want to share all of that with whoever wants to come along on my journey. Enjoy!
